  • the History of Taichi's Development in Peking

    2007-09-07 16:25:33

Taichi has  a history of several hundred years with many famous experts, and now it has developed into five main branches, such as Chens', Yangs', Wus', Suns' and so on. In fact, it originated from Chenjiagou of Wen county, Henan province.

Mr Chen Changxing, 14th disciple of Chen’s Taichi, made a great contribution to the ancestral Taichi. He summarized concisely and innovatively the five sets of Taichi created by Mr Chen Wangting to form a perfect system called “ Laojia”,which includes 2 sets of Taichi. Additionally, he also broke the rules that it was forbidden to teach Taichi to someone who had a different family name to impart his kungfu to Mr. Yang Fukui( Yang Luchan). Then Mr. Yang taught Taichi in Beijing after he finished his study with Mr. Chen Changxing and gradually it was spreaded widely and changed into a new system of Taichi, named as Yangs’ Taichi. And then Mr. Quan You, a Manchu person, learned Yangs’ Taichi from the son of Mr. Yang Fukui and taught his son Jianquan.Again Jianquan changed it into a new system of Taichi. Since Jianquan used the family name of Wu later, so his Taichi was call Wus’ Taichi.

Mr. Yang Luchan, the Founder of Yangs' Taichi

Taichi was spreaded into Beijing in the age of Tongzhi emperor of Qing dynasty, when it was just practiced by members of royal family. Then it came into the citizens’ life in 1913 as a sport when Mr. Yang Shaohou, Mr. Yang Chengfu and Mr. Wu Jianquan were engaged in teaching Taichi to the mass. From then on, Taichi started to be popular in the society and common people could benefit from it. As many students were senior people who could not do some complicated movements like jumping, so Mr. Yang Chengfu and Wu Jianquan reduced all the complicated movements and slowed down the speed of movements.  As time went by, it has become many people's daily exercise till now.

  • Most Delicious Beijing Food— Beijing Roast Duck

    2007-09-07 11:32:51

Beijing Roast duck is thought to be one of the most delicious dishes all over the world; most visitors coming to Beijing will never forget to have a try. Eating Beijing Roast duck is seen to be one of the two things you are absolutely supposed to do while in Beijing.

    What is Beijing Duck Recipe?
Normally there are many dishes served with the duck, including a dish of fine-cut shallot bars, a dish of cucumber bars and finally a dish of paste-like soy of fermented wheat flour. It is not necessary to order extra soup, for the duck-bone soup is always included in you order. It will be served as the rear dish for the dinner.

    Which restaurant is famous one?
The two famous restaurants that serve Beijing Roast Duck are Bianyifang Roast Duck Restaurant and Quanjude Roast Duck Restaurant, both of which have a history of over one hundred years. They represent two different schools of roasting duck.

Bianyifang, founded in 1855, makes use of a close oven and straw as the fuel, which won't make flames go directly onto the duck. Before being put into the oven, a duck is filled with specially-made soup to make it possible to roast the duck outside and boil it inside at the same time.
Quanjude, a better known one, founded in 1864, uses an oven without a door. After a kind of dressing being spread all over a duck, it will be hooked up in the oven over the flame coming directly from the burning of the fruit-tree wood and it will be done in forty minutes. When roasted and dried, the duck will look brilliantly dark red, shining with oil and with crisp skin and tender meat. Because of its appearance, few people could resist the temptation of it.

    How to eat it?
First, the chef will show you the whole duck. Then, he will slice it into about one hundred and twenty pieces with both skin and meat for each. Usually the duck is served together with special pancakes, hollowed sesame bun, green onions and sweet sauce.

There is a proper way to eat it. First, pick up a slice of duck with the help of a pair of chopsticks and dip it into the soy paste. Next, lay it on the top of a thin cake and add some bars of cucumber and shallot. Finally, wrap the stuff into a bundle with the sheet cake (a thin pancake). The real secret of Peking duck's flavor lies in your carefully nibbling away at the mixture. You will find all the different ingredients very compatible. People say: "it's a pity to leave Beijing without trying the roast duck The taste of the roast duck is in the eating.

Hutong is a kind of special lane or alley only Beijing city has. Beijing’s Hutong formed in Yuan dynasty, 13AD, and have been several hundred years in China.

Now there are thousands of Hutongs in Beijing which are around the Forbidden City. Most Hutongs lie east to west and no more than 9 meters wide, and they are always compound with Siheyuan (a compound with houses around a courtyard). These Hutongs link with these Siheyuan where old Beijing residents live, witnessing the vicissitude of the city.

Although so many Hutongs seem to be the same superficially, each one has its characteristics. Some of them are named by someone’s name because he or she has ever lived there; some of them are named by its shape; and most of them do not have their names but they have countless its own historical stories that cannot be forgotten and changed.

The residents of Beijing city have special feelings to their Hutongs, because they not only are the places where people live but also are the museums of customs and social life.
